pumpkin puree creations


Last week, I did some fall inspired baking. Isn't it funny how one thing can lead to another? I didn't intend to bake and make all the pumpkin things. But an open partially unused can of pumpkin staring at me from the refrigerator shelf was just asking for more.

It all started with an afternoon of baking pumpkin chocolate chip cookies. They didn't turn out right and I was perplexed about their flat appearance. They literally crumbled when you attempted to pick one up. Oy.

Since I still had half a can of pumpkin puree left, I could try again. I bought new baking powder, in case that was the issue, but as I was following the recipe on my blog, I realize the issue. I added too much sugar the first time around. I somehow got it in my head these cookies needed brown sugar (and the recipe doesn't call for a granule of brown sugar). The second batch turned out much better!

This left me with an unopened can of pumpkin puree yet again! Thankfully, my friend sent me a link to pumpkin spice latte syrup. Yes! This needed to be made, but guess what? It didn't use the whole can of pumpkin puree either.

Next up, I took on the Copycat Starbucks Pumpkin Scones.




I have to admit, there are about 2 tablespoons of pumpkin puree left. It is sitting patiently on my refrigerator shelf. Will I find another recipe to try or will the puree get tossed?
