pumpkin pie {oatmeal}

Earlier this fall, I found this recipe via Pinterest and I finally took the time to try it last weekend.  I made a few changes since we try not to eat much sugar, and  it was very yummy!
Here's my modified version ((for two)).
Ingredients:
1/2 cup rolled oats
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp salt
3/8 cup canned pumpkin puree
3/8 cup 2% milk
2 tbsp butter
1 tbsp brown sugar
1/4 cup chopped pecans

Directions:
Preheat oven to 375 and grease two ramekins.
Combine salt + oats in one bowl, set aside.
Mix milk, pumpkin puree, cinnamon, nutmeg in another bowl and whisk thoroughly.
Add 1 tablespoon butter and continue to whisk.
Add oats to mixture.
Divide mixture between grease ramekins.
Bake for 10 minutes.
While oatmeal mixture is baking, combine remaining 1 tablespoon of butter with 1 tablespoon brown sugar and chopped pecans.
Remove from oven and add topping, and bake for 7 minutes.
Have you tried any new-to-you recipes lately?
