sometimes my husband makes a meal that's so tasty and i ask where he found the recipe. he often responds with "i didn't use a recipe." then i say, "can i ask you about it so i can blog about it?" while i regret not taking a photo of the meal before we ate. i pull out the camera as he plates up another serving (often his second portion) and we're in business...i hope you enjoy!
ingredients
2.5 lb. whole chicken with skin on
4 med. gold potatoes, cut in half
1/2 lb. baby carrots
3 large stalks of celery, cut into 1" pieces
2 tsp. rosemary
2 tsp. thyme
salt + pepper (to taste)
1/2 lemon, sliced
directions
arrange cut potatoes facing cut side down, add carrots and celery in crockpot
stuff lemon slices into chicken cavity
season inside of chicken lightly with pinch each salt, pepper, rosemary + thyme
generously season outside of chicken with same
(optional + not necessary) add 1 cup white wine to crockpot
place chicken in crockpot on high for 1 hour, adjust temperature to low and let cook for 8 hours
remove chicken from pot and let rest for about 15 min.
there will be plenty of juice to make gravy (although we didn't)
yields: enough chicken to make dinner for 4 people or dinner for 2 plus leftovers (which turn into chicken salad around our house)
note: this isn't lemon chicken in any way; the lemon flavor isn't strong at all.

ReplyDeleteYES! I bought a whole chicken a while back an needed a crock pot recipe. It's that time again to make things in a crock pot. This year my goal is to try to do at least 3 things ;) and I am sure their will be more.
