I've been trying to use the crockpot for more meals, especially when it's so hot and I don't want to stand in front of the oven/stove. The biggest challenge I face is planning ahead. It does require knowing what you want for dinner more than an hour in advance, but I think I'm up for the challenge.
In a recent AllRecipes.com search, I came across this one and modified it a bit based on what was available.

ingredients:
2 frozen chicken breasts [boneless and skinless]
6 oz. of TJ's salsa [use milder if you want less punch]
8 oz. can tomato sauce
2 tsp Mrs. Dash Spicy seasoning
2 tsp ground cumin
1 small bunch cilantro
2 garlic cloves, finely chopped
1/4 red onion, sliced
dash of chili powder
sliced red and green bell peppers
sliced red and green bell peppers
directions:
combine salsa and sauce, stir in spices, onion, garlic and cilantro and add chicken
[be sure to coat both sides]
place the lid on the crock pot and set on low for 7 hours
[closer to 4 hours if the chicken isn't frozen]
With two hours remaining, I added the sliced red and green bell peppers

sour cream and/or shredded cheese would have been good additions too.
