Recently, I made one of my mom's favorite recipes.
I had almost forgotten how much I love eggplant parm.

I had almost forgotten how much I love eggplant parm.
I used slightly less sauce than the recipe calls for because
that's the way I like it [no soggy bread crumbs, please].

3/4 c. extra virgin olive oil
2 tsp. oregano

What's your favorite recipe
your mom [or dad] cooked?
This looks so good! We tried eggplant once but it was a bit of a disaster -- this recipe makes me think it might be worth trying again :)
ReplyDeleteMy mom makes an amazing eggplant parm-I won't eat it at a restaurant, it just won't hold up. I love making recipes from your parents...they just make you feel cozy and taken care of!
ReplyDeleteHave a great weekend!
