when our first delivery from boston organics arrived,
i was determined to use the items inside right away...
and not run to the grocery store to supplement it in any way, not the first day.
i had never cooked with several of the items inside the green box:
chard & kale
i pulled out a favorite recipe book, simply in season for some ideas

and found this recipe: greens in peanut sauce
then, decided i was in the mood for fries,
and we use some of the 2 lb. of potatoes from the box
and found this recipe for thai fries.
greens in peanut sauce
ingredients
1 medium yellow onion, diced
2 cloves of garlic, minced
1 tablespoon olive oil
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon salt
1 lb. kale
1/2 c. water
2 tablespoons
1 teaspoon hot water
directions
in large stock pot, saute onion & garlic with olive oil for 2-4 minutes.
add spices and stir, cook two minutes.
add greens & water, steam until greens are soft, but not mushy
{do not overcook & make sure the greens get coated in the spices}.
combine water & peanut butter and add to greens mixture, remove from heat.
thai fries
ingredients
3 medium potatoes, sliced
1 tablespoon peanut walnut oil
1 tablespoon fresh lime lemon juice
1 tablespoon fish sauce
1 tablespoon peanut butter
1/4 teaspoon each salt + pepper
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 teaspoon chili pepper sauce
1-2 tablespoons vegetable olive oil
directions
preheat oven to 400 degrees farentheit.
combine all ingredients [except potatoes] in mixing bowl & mix well.
dredge potato slices in mixture and place on baking sheet.
Totally making this this week!! I honestly am scared of Kale- but this recipe is calling me so much that Im willing to try it!
