homemade eggnog

my friend, ryan, suggested i add this recipe to my blog...
and it's actually his recipe adapted from alton brown's.
[i had never had homemade eggnog before...and it was quite tasty]
homemade eggnog with serious foam
ingredients:
1 pint whole milk
1 cup heavy whipping cream
4 eggs (raw and separated)
1/3 cup sugar + 1 tablespoon
3 oz. rum (we used appleton estates)
pinch of pumpkin pie spice

directions:
in the bowl of stand mixer, beat egg yoks until lighter in color.
gradually add 1/3 cup sugar and beat until dissolved.
add milk, cream, rum and spice and stir to combine.
remove mixture from bowl, set aside.
place egg whites in bowl of stand mixer and beat to soft peaks.
while mixer is still running, gradually add 1 tablespoon sugar,
beat until stiff peaks form.
whisk egg whites into the mixture, serve chilled.
