while running an errand over lunch on monday,
i realized i nearly forgot what the 40s felt like

i may be exaggerating (but only slightly)
the only thing i could think about was making something warm for dinner.
after a trip to the grocer, my hankering for french onion soup won out.
this surprisingly simple & inexpensive version was a hit!
(already had gruyère on hand from making pumpkin mac and cheese a few weeks ago)
i had seen this version recently, but made my own with non-veggie ingredients

ingredients:
3 yellow onions, peeled & sliced thinly
32 oz. beef broth
1 french onion soup packet
2 T. butter
1/4 c. cooking white wine
butter garlic croûtons
gruyère cheese, sliced thinly
extra sharp cheddar, shredded
directions:
combine onion & butter in dutch oven or large pot on stove over medium heat
once the onions are translucent and nearly limp, add beef broth and soup packet
stir to dissolve soup, bringing to boil
add white wine and adjust to low heat, placing lid
let cook for another 10 min. or so
place generous handful of croûtons in oven-safe bowls
cover croûtons with soup, be sure to get lots of onion in the soup
layer thinly sliced gruyère & sharp cheddar on top
broil on low for 7 minutes or just until bubbly
we don't have those cute little crocks, but our bowls are oven-safe
warning: this is not a low-fat or low calorie meal, sorry!

i want to make this so bad!!! however, being in a muslim country, i won't be able to get cooking wine anywhere. pout pout. frown frown.
